Simple and Easy Low Carb Lunch Ideas

Lunch shouldn’t always make you feel guilty because of too much carbohydrate intake. And it shouldn’t also be difficult and time-consuming to prepare. Here are some simple and easy low carb lunch ideas for busy people like you.

Meal Salads. Instead of using the common iceberg lettuce, you can use dark green leafy vegetables for your salad because they have more nutrients. You can buy chopped, cut, or sliced salad greens from groceries to make your salad preparation easier. For dressings, make sure that you are using a low carb or ‘light’ dressing. Oils in your dressing should be monounsaturated fats, like in olive oil. You can even make your own dressing by using oil, mayonnaise, herbs and spices, and lemon juice or water—all low carb.


Rolls. Use a big lettuce leaf to roll your ‘mushy’ ingredients such as tuna, salmon, chicken salad, or egg. You can choose whatever you want to add. You can also try meat such as roast beef or ham as your roll wrap and roll cheese and vegetables into it. Low carb tortilla wraps with whatever you want to roll it with are also good low carb lunch ideas. Just remember—keep everything low carb.

Soups. In preparing low carb soup, don’t add starch such as noodles, potatoes, rice. You can add vegetables and meat into your pot of soup. You can also buy canned soups that are low carb but be very keen. Read the label and look for the words ‘low carb’ or ‘light’.
